Fried Potatoes

Today we will make fried potatoes as a side dish for our lunch. This is one of the tastiest dishes that you can make for any occasion with a very little effort. The number of ingredients that goes in is also quite flexible.  You could eat this with white rice, bread or with Indian bread (roti/paratha) together with some salad.

  • 4-5 Potatoes
  • 1 Onion
  • 3 Red or Green Chilies
  • Salt
  • Cumin Powder
  • Chili Powder
  • Turmeric Powder (optional)
  • Coriander or Curry Leaves
  • Two tablespoon of vegetable /canola oil
  1. Wash 4 to 5 medium sized potatoes and chop into thin slices.
  2. Soak the chopped potatoes in a bowl of water. You can add half a tablespoon of salt into the water. Let it remain for 10 minutes.
  3. In the meantime chop a medium sized onion and 2 green or red chilies.
  4. Rinse dry the chopped potatoes.
  5. Heat a frying pan, add 2 tablespoon of cooking oil. You can use vegetable oil, canola oil or mustard oil.
  6. After the oil is heated add the chopped onions and the chilies.
  7. Once the onions are golden brown add the chopped potatoes.
  8. Add salt to taste.
  9. At this point depending on your taste you can add half tablespoon of turmeric powder, chili powder and cumin powder. If you do not like these spices then you do not have to add them. Just add half a tablespoon of black pepper.
  10. Mix and cover cook for 5 minutes.
  11. Remove the cover and then cook for another 3 to 5 minutes. If you do not prefer fully cooked potatoes then you can cook for 1 to 2 minutes rather than 3 to 6 minutes.
  12. Add coriander leaves to garnish.
  13. Serve and eat hot.
